AMAZING COOKIES - When I was holidaying in NYC late last year, a visit to @levainbakery where the skeptical @my_bloody_clementine and I queued up for the cookies and then couldn't resist eating them straight away led me to go back and buy 2 dozen cookies to lug back to Melbourne. In between getting scanned for drugs by the airport security people who then opened my perfectly packed cookies and then one of them saying "you better take those away from me or else I won't be responsible if some go missing" to bumping into @hannahtdub on the flight home and eating a cookie, I gave 3 cookies to @rymondtn and jokingly said he should try and make them. After testing and different revisions, Raymond cracked it and his cookies as seriously as good as the Levain Bakery ones. And now he's selling them as he's baking up a storm in isolation (buy from his website). With five delicious flavours, you can't go wrong. Every single one is so good, even the ginger one when normally I don't like ginger in desserts much. I still love the classic double choc chip the most but they're all great and I'm happily eating them all. Upma & Bajil Upkari ( spiced flattened rice) is one of our favourite and popular breakfast in Udupi. The spiced flattened rice is made two ways and I will share the recipe so that you can decide to make whichever you want to. Its a nice healthy snack which you can keep munching on!! If you need the recipe for upma, do let me know. Sharing the recipe for the Bajil Upkari (spiced flattened rice) Recipe 1 Ingredients 2 cups nylon poha 1 onion 1/4 cup jaggery 3 tsp curry (sambhar) powder Salt as per taste In a bowl, grate the jaggery( or if the jaggery is soft you can mash it with your hands), add salt, onion and curry masala. Mix it well. Add the nylon poha and mix with your hands till the curry masala mixture had coated the nylon poha uniformly. Serve it with chai or coffee Recipe 2 Ingredients 2 cups nylon poha 1 onion 1/4 cup Jaggery For tempering- 1 tbsp oil, 1 tsp mustard seeds, 1 tsp udad dal, 5-6 curry leaves, 2-3 chopped green chillies. Heat oil, add all the ingredients for tempering. Once the seeds start to crackle,pour this on the poha,onion jaggery mixture. Mix well with your hands till you get a uniform mixture. Another successful dinner provided @realhomechef and made by me. The actual cooking was easy, it was the reading and mental organizing that I’m still getting used to. They are also introducing me to new flavors. The sauce for this shrimp dish was ponzu + mayo! Sounded gross but it really kicked it up a notch when added as a final touch to the dish.

And the pratas turned out pretty well! Especially given it's the first time I am doing this. 😅 They are crispy and pretty legit. There are still some tweaks and experimenting to do but for now, it works. I also definitely need to try and master flipping the prata. For those of u who are lucky enough to own a thermomix, this will be a breeze. The recipe for this is in Cookidoo. If you do not own a thermie, you can use a kitchen mixer to help knead your prata dough. Recipe (from Cookidoo) with some tweaks 260g cold water 20g of condense milk 20g of sugar 500g of plain flour 220g butter/margarine (planta) important that it is softened. 20g for the dough and 200g for later) 10g salt 1. Place water, condensed milk, sugar, plain flour, 20g butter (not 220!) And salt in mixing bowl. Knead for 3 mins using knead mode. Let it stand in the bowl fit 5 mins. 2. Knead again for 3 mins. Transfer the dough onto a mat, roll into oblong shape. Divide into 10 equal portions. Place a tray on the mixing bowl lid and weigh in 200g butter. Place the dough balls on tray and coat generously with the butter or margarine. Cover with cling film, refrigerate for at least 2 hours or overnight. 3. Place the dough ball on a lightly greased surface and lightly flatten it using the heel of your palm to make it flatter. Flatten it from center outwards. Stretch it as thin as possible. You can add more butter or oil to help with the stretching. Scrape and push the upper end of the dough to the middle. Do the same for the lower end. Then roll into a spiral shape and tuck the other end inside. Repeat for remaining dough balls. Rest for 10 mins. The dough balls that is, not you. 4. By now, you might want to just go out and buy a prata but persevere! You are almost there. 5. Take one dough spiral and flatten into a circle. It's up to you how thick or thin you want it to be. Why not try both and decide later? I prefer thinner. Grease your frying pan. I used vegetable oil and some margarine. U can use butter too. I find it useful to have a bowl of oil on standby. Cause I see the prata stall guys do the same! 6. You can also watch YouTube videos to learn how to spiral and flip. 😃 Stay safe guys!

I like how they do their coffees at @thecoppermill - smooth n creamy ❤️ theyre currently doing a takeaway menu called ‘pandemic menu’ 😂 the menu is considerably simpler than their BAU menu tho. The staple that has received much attention during this pandemic. We had a batch of whole wheat spaghetti at the back of our shelves for a while now and we decided it was time we used it. This meal took all of 30min to put together and I do see the appeal of such a quick recipe. It's a mix of parsley pesto, store bought sun-dried tomato paste (also contained sardines) and spaghetti. Top it with olives and grated cheese. The pesto was a blend of parsley, olive oil, roasted walnuts, garlic cloves and salt. I tend to overeat whenever I make pasta (it's just so easy to gobble down).
