Me eating and cooking is directly proportional to my level of happiness. I usually cook in the morning after doing regular household chores and eat around 10.30-11 am and dinner at 7 pm. We have been avoiding lunch since lockdown and have been cooking very simple - basic meals. With all the sad news around I’m hardly able to cook and enjoy my meals. But inspite of all the sad new I was feeling very hopeful today morning and thought of preparing something simple which my taste buds will enjoy. 🔹 Steamed rice. 🔹 Mix Moong-massor dal tampered in mustard oil with panch phoron. Panch phoron consists of 5 spices - Cumin, Brown Mustard, Fenugreek, Nigella and Fennel. Cooking mix moong-masoor Dal is very common in Assamese household. 🔹Mix vegetables. I bought some fresh vegetables today morning,so took out everything what was left in the fridge. Mix vegetables consists of brinjal,pumpkin,potatoes and sponge gourd. 🔹 Chickpea flour and finely chopped potatoes fritters.Have added onion,green chilies,salt and pinch of baking soda before frying it in mustard oil. . . And so on a postcall day, i’ve decided to make these super quick and simple Prawn Rolls; ready in less than 5minutes. These warm butter-toasted buns, filled with crunchy lettuce and Japanese cucumber, are topped with fresh tiger prawns lathered with a smooth mixture of yuzu and sesame mayonnaise with a dash of extra hot peri peri sauce. Do not skimp on the butter as it’s the secret ingredient of this simple sandwich. Pair it with some simple lightly salted crispy potato chips and you have a winner right there. Delicious!

Accras are great with bakes as an appetizer or breakfast dish. Ingredients 2 cups flour 2 tsp baking powder 1/2 lb chopped shredded saltfish 2 scallions chopped 1/4 cup green pepper chopped 1 small onions chopped 4 cloves garlic 1 tsp thyme 1 tsp parsley hot pepper sauce to taste black pepper to taste water oil for frying The Method 1. Combine the chopped green pepper, scallions, onions,garlic in bowl. 2. Add remaining ingredients except water and mix thoroughly. Add hot pepper sauce and water making sure that the mixture reaches a thick consistency.  3. Beat the mixture until is smooth. 4. Heat the oil in a frying pan and drop by spoonfuls into hot oil and fry until both sides are brown. 5. Drain excess oil on paper towel. .
